They have potential

I tried my hand at stuffed peppers last night. I saw someone on the Food Network make them and tried to replicate the recipe by memory. I should know better than to trust my memory considering I can’t remember what color underwear I’m wearing. Or if I”m even wearing any for that matter. The peppers were okay. And by okay I mean they had to be doused in BBQ sauce. Basically I forgot to season them so they were bland. Use this recipe as a base but load them with your favorite spices to give them so oomph. Then they’ll be good. Promise.

Bland Stuffed Peppers

Cut the top off of 3 green peppers

Stick pepper tops, one yellow squash, one zucchini, half an onion and garlic in food processor. Process till it’s mostly ground.

At the same time, boil 2 cups vegetable stock and one cup whole wheat quinoa. Let simmer for 15 minutes.

When couscous is done cooking, add veggie mix and stir.

Add cheese of choice to mixture. I used mozzarella.

ADD SPICES HERE.

Stuff those peppers leaving a little room at top.

Bake at 375 for 45 minutes. Add cheese to top during last 10 minutes of baking.

(I also stuffed zucchini for fun.)
