Goodies Galore

Learning to focus less on dieting and more on overall health and wellness

Dominate those pies.

Happy Thanksgiving friends and family. Len and I arrived at his parents house in Vermont yesterday, We’ll be here till Saturday and let me tell you, it’s COLD! The weather forecast is calling for a wintry mix tonight with freezing rain, sleet and snow. BRRRRRRR.  It was damn cold for my 4.5 mile run this morning but after last night’s date ball and ice cream episode, girlfriend needed some movement.

We already ate Thanksgiving dinner and boy was it good. How cute are these name cards homemade by Lens fam.

Aww

Now we’re lounging in front of the TV in an attempt to make room for the 15 pies that await us. If it were up to me, we would have busted into the apple pie last night but Len put a stop to that idea. I thought it would be funny to cut two perfect slices out and blame it on the dogs. Eleanor, bad girl!

My contribution to dinner was a total bust which blows because I had such high hopes for it.

I made whole wheat couscous with caramelized onions, raisins, toasted walnuts, zucchini, granny smith apples, salt, pepper, garlic, brown sugar, butter and orange zest.

re-hydrated raisins and walnuts

zucchini

onions and sautéed apples with a little bit of brown sugar and butter

Then I stuffed it into peppers.

They look good but trust me, they’re deceiving. Problem was, the pepps didn’t have enough time to bake and never got soft. Sadly they didn’t go very fast.  They also lacked in seasonings. I need a private lesson in Spice 101.

Hell, at least I looked cute in an apron.

Santa if you’re reading— I could really use an apron of my very own. Preferably one from Anthropology or Urban. I’ve been good. Mostly.

Len’s sister and I are hitting up some stores before the sun comes up tomorrow morning. I’ve actually never participated in Black Friday so we’ll see. I’m a little worried about getting trampled by all the crazies. Gonna have to pack my brass knuckles.

What was the best thing you ate today?

  2. Yeah I have never done the Black Friday thing either- sounds scary! Best think I ate…hmm I have to say my sweet potato casserole which is CRAZY good. Although we haven’t cut into the pumpkin roulade or pecan pie yet 😉

  3. Anthropologie usually has the aprons on sale for 15 bucks every couple of months (FYI).

Also, I have an amazing veggie puree gravy I created this year. I am in love. I am happy to share it with you if you’d like. Email me if you want it.

Talk to you soon my dear.

    Happy thanksgiving!

  5. Luv the outfit and you look adorable. Didn’t know you liked aprons. Could have given you about 20 from Nana’s dresser: not from Anthropology or Urban though, how about Caldor or Bradlees? Lol!!! Good luck with the Mall Madness tomorrow: pray for patience, I’m afraid you are going to need it.

  6. One more thing: you need to par-boil the peppers first before you stuff them.

  7. Sorry your dish didn’t turn out well. You need to check out etsy for your apron needs. They are A LOT cuter and cheaper than anything you’ll ever find in Anthro. Gobble gobble girl!

  8. Black Friday in Vermont? Hmm, I think of Vermont being pretty much empty, but I should know better since I lived there. I hope you weren’t trampled by some nut job who really wanted the last combination electric bubble blower and EZ bake oven. Have a great weekend!

  9. I had my bf’s mom’s homemade apple cake & chocolate milk this morning for breakfast. 🙂

Hope you didn’t get too trampled while shopping with all the kooks today! I never understood the black Friday hooplah.
